Mike's Marshmallow Recipe
- (1) Bloom 2.5 TBSP of gelatin in 0.5 C. of cold water in mixer bowl for 15 minutes.
- (2) Combine 0.5 C. of water, 0.66 C. of corn syrup, 2 C. sugar, 0.25 tsp. salt in pan. (Avoid getting sugar on sides of pan)
- (3) Bring everything to a boil over medium high heat, gently swirling from time-to-time, to 240 degrees.
- (4) Whisk gelatin mixture on low for a bit, slowly pour in hot sugar syrup.
- (5) Gradually increase whisking speed to high, mix for 10-12 minutes till bowl is barely warm and mixture is firm.
- (6) Add 2 tsp of vanilla extract
- (7) Quickly scrape mixture with oiled spatula into greased and foil 13x9 pan
- (8) Quickly smooth top and dust with 2-3 TBSP of following mixture (0.5 C. of corn starch and 0.5 C. of powdered sugar)
- (9) Cover with plastic wrap and let it set up overnight.
- (10) Dust countertop with starch mixture. Flip marshmallow block onto countertop. Dust other side of marshmallow bock. Cut into squares with oiled chef's knife.
- (11) Roll a couple marshmallows at a time around in starch mixture. Toss in wire strainer to knock off excess starch.
- (12) Store in airtight container for up to 2 weeks.
